This is such a go-to lunch for me because it’s veggie packed and so delicious! There’s a lot of controversy over what this is called so I’m not really sure what to label it but some people call it pico, cowboy caviar, Texas caviar or bean salad! You can really call it whatever you want but definitely give this a try it’s amazing you’ll love it 🫶🏼 NOTE: If you’re making a big batch for the week I would recommend keeping the avocado separate so it stays fresh!
