Super rich and decadent treat without the refined sugars and processed ingredients. These vegan bars are easy to make and satisfy your sweet cravings with just one square.
1. Make the base layer: Combine cashews and peanuts. Blend until a flour texture is made. Set aside.
2. Make the caramel sauce: Blend the dates, water, and vanilla until smooth.
3. For the base layer, add 1/4 cup of the caramel sauce to your flour mixture. Add 2 tbsp of peanut butter and mix well. Add to your dish (e.g., a 7x5 inch Tupperware, baking dish, or silicone mold) and spread evenly.
4. Add 2 tbsp of peanut butter to your remaining caramel sauce. Mix well and spread evenly over the base layer. (Optional: add peanuts on top at this stage).
5. Place in the freezer for 2 hours or overnight until the caramel sauce is hardened.
6. Melt your chocolate in the microwave. If it feels too dry, add milk (do NOT use coconut oil). Spread evenly over the other layers and put in the freezer for 20-30 minutes.
7. Take out, cut into pieces, and enjoy! The bars should last a while in the freezer if covered.
