Jack-O’-Lantern Stuffed Peppers

1. Start by washing your bell peppers and carving Jack-O’-Lantern faces into them with a knife. Cut the top off and remove all seeds/ center of the bell peppers. Place into a baking dish and set aside.
2. Preheat oven to 400F. Make the filling. Heat some olive oil in a pan, add onion and cook until translucent. Add your garlic and cook 1-2 minutes until fragrant. Then add your rice and cook 3 minutes to crisp it up a bit.
3. Make a hole in the mixture and add tomato paste to cook for 1 minute. Add in your vegetable broth and mix well. Then add your taco seasoning, diced green pepper, tomato, green onion, salt and pepper. Mix well, bring to a boil, cover and simmer for about 20 minutes until the rice is cooked.
4. Once the rice is cooked add in your beans and corn. Mix well. Add about 1 cup of the filling into each bell pepper, place the top on and cook in the oven at 400F for 30 minutes. If you want to add cheese, take out after 15 minutes, add them out back in. Serve with toppings and enjoy!!
