Nourishing Fall Dinner series pt. 1: Butternut Squash Gnocchi
15 mins prepServes 4
This is one of my favorite falls dinners and I’ve been SO excited to make it all year! I created this recipe last year and it’s just the creamiest and most delicious pasta sauce you’re gonna be obsessed.
1. Preheat your oven to 430F. Chop your butternut squash, onion and garlic. Add butternut squash and your onion to a lined baking sheet and drizzle in olive oil, salt and pepper. Peel the outside of your garlic clove and cut off the top. Drizzle olive oil over it and wrap in foil. Place on the baking sheet with the other veggies and roast in the oven for 30-40 minutes or until the butternut squash is soft.
2. Make your gnocchi according to the box directions.
3. Make the sauce. Into a blender add the roasted butternut squash, onion and squeeze in the roasted garlic bulb. Add the cashews, spices, pasta water and veggie broth. Blend until completely smooth.
4. Mix together the sauce and pasta and enjoy!!!!
Note: You will have lots of extra sauce left over. Feel free to half this recipe or store in the fridge for up to 4 days. It’s a great for a meal prep pasta!
