This easy, one-pot sweet potato taco soup recipe comes from a friend and has become a go-to meal, ready in about 20 minutes. It's plant-based, vegan, and healthy.
1. Dice your onion and sweet potatoes. Open corn, kidney beans and black beans. Drain and rinse well. Place all ingredients near stove.
2. Heat a little oil on medium high heat. Add onions and cook 4-5 minutes until translucent. Add your taco seasoning and let cook for 30 seconds until fragrant. Add sweet potatoes and cook for 2-3 minutes mixing it well with the taco seasoning. Deglaze the pot with a bit of water if needed!
3. Pour in your corn, beans and chiles/ tomato mix. Pour vegetable broth over and mix well.
4. Bring the soup to a boil, cover and simmer for 10-15 minutes. It’s ready once the potatoes can easily be pierced with a fork. Add your toppings and enjoy!!!
