Tofu Peanut Noodles

1. Preheat oven to 430F. Chop tofu into 20 pieces and place in a bowl. Drizzle over some olive oil and soy sauce. Sprinkle some corn starch over and mix well. Place on a baking sheet and bake 45 minute until crispy flipping halfway.
2. Make your noodles according to package directions. Set aside.
3. Make your peanut sauce. Mix ingredients together in a bowl until we’ll combined. Thin with more water as needed.
4. Make broccoli. Heat some oil in a skillet and add your garlic. Add a splash of soy sauce then your broccoli. Cook for 2 minutes then add a splash of water. Cover and steam for 3-5 minutes until soft but still firm. Set aside in a bowl.
5. Add 1/2 your peanut sauce to the same skillet. Add your baked tofu on top and cook for 2 minutes. Then add in the rest of your noodles and sauce. Mix well.
6. Plate your noodles. Add the broccoli on top along with sesame seeds and green onion. Enjoy!!
