Veggie Hummus Wrap

1. In a bowl, combine the tahini and lemon juice and “whip” with a whisk until smooth. Open, drain, and rinse the chickpeas. Add chickpeas, lemon/tahini mixture, garlic, olive oil, cumin and salt. Process or blend on high and scrape the sides down when needed. Add a tablespoon at a time of water while processing the hummus. Do not add more than 3 tbsp. This will give the hummus a creamier consistency and allow it to blend better. Taste and adjust the hummus seasoning as needed.
2. Assemble your wrap! Spread hummus on it and add all your chopped veggies and quinoa. Top with tzatziki sauce, wrap and enjoy!!
